Ingredients:
1.5 ounces (1/3 cup) flour
1.5 oz (1/3 cup) whole-wheat flour
1.5 cups rolled oats
1 tsp. baking soda
1/2 tsp salt
6 tablespoons unsalted butter
3/4 cup packed light brown sugar
1 cup dried cherries
1 teaspoon vanilla extract
1 large egg, lightly beaten (go cage free!)
3 oz. bittersweet chocolate chopped

Instructions
- Preheat oven to 350°.
- Combine flours, oats, baking soda and salt in a large bowl.
- Melt butter in a small saucepan over low heat. Remove from heat and add brown sugar, stirring until smooth. Add the sugar mixture to the flour mixture and beat with a mixer at medium speed until well blended. Add cherries, vanilla, and egg and beat until combined. Fold in chocolate. Drop dough by tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 12 minutes. Cool on pans for 3 minutes or until almost firm and remove from the pan to cool the rest of the way.
